I’ve been eating plant-based for over eight years, and it seems like I’m still nowhere near running out of new things to try! But despite all the exciting new plant-based recipes popping up everywhere these days, there’s just nothing like some tried-and-true favorites. Here are a few of mine!

It took me many years of eating plant-based to finally be ready to try a few green smoothies—but I’ve never looked back! I absolutely love this one. They’re incredibly easy to make and so refreshing!

avocado & quinoa salad with edamame & dried cranberries
This was one of the very first recipes I ever tried from the Meal Planner, and it has become a staple in my house. We make a big batch on Sunday and eat it all week! My boyfriend likes to add tofu for extra protein, and I sometimes swap out the cranberries for purple cabbage when I want a little extra crunch.

aubergine tomato pasta basil pesto
As a huge eggplant fan and a huge pasta fan, I am completely devoted to this recipe. The flavors are amazing, and the pine nuts add that perfect extra little bit of crunch!

portobello black bean tacos with avocado cream
I grew up in California, which is the best place for Mexican food outside of Mexico. As a kid I could never have enough tacos, no matter how many I ate! Since moving to the east coast, I’ve had to learn how to make my own. Although this isn’t a classic Mexican recipe, these mushroom tacos are still soooo delicious.

Last but not least, I absolutely had to include this mouthwatering pho. It can be so difficult to find a good pho recipe, but this one is not only super tasty but also very adaptable! It can easily be made with different noodles, or not spicy, etc. Personally though I think it’s perfect just the way it is!
