Food Coach Wendy’s Favorite recipes
I have a few requirements when I decide what to eat, the first is flavor, I love working with herbs and spices to create a flavorful dish and I don't mind recipes that need simmering to really coax out those flavors. The second requirement is that it has to be filling and satisfying, and lastly I want to be able to store my leftovers as I often enjoy them the next day.
My favorite recipes offer a variety of flavors and are guaranteed to satisfy. I hope you'll enjoy these as much as I do!
Thai Sesame Noodle Stir Fry
I love Thai-inspired dishes and this Noodle Stir fry is quick and easy to make, as well as flavorful. It is part of my rotation since it can be made with any veggies you have laying around.
Leek and Potato soup
The classic vichyssoise but completely plant-based. This is the perfect comforting bowl of soup that makes you feel energized. Pro-tip, I love to add some fresh cut chives on top for extra flavor.
Fresh Thai Spring Rolls
If there’s peanut sauce, I’m in! This recipe is energizing and a great meal idea for a warm day. It requires quite a bit of prep, as it has loads of veggies that need to be chopped, but you can easily make these ahead of time and store them in the fridge.
Ethiopian Lentils & Collard Greens
Lentils are my favorite legumes, they can be included in almost any type of recipe and are known to be nutritional powerhouses. I love the Ethiopian-style lentils as they are flavorful and fairly easy to make. The addition of collard greens makes this meal nutritionally complete.
Pasta Puttanesca
I love pasta, this puttanesca really hits the spot. I would highly recommend including the optional capers as it adds that extra umami to the dish. Olives would be a great addition too!
Classic Fluffy Pancakes
I can honestly say that I love these pancakes more than a non-vegan pancake. Before I discovered these I hardly ate pancakes because I always felt so stuffed afterward. For me, this was the answer for days when I have some time to take it slow in the morning and enjoy breakfast. I love topping these with blueberries, strawberries, and a bit of almond butter.
Orecchiette with Walnut Pesto and Roasted Broccoli
I usually have a basil plant either on my countertop or in my yard when it is summer, so a recipe like this is a great way to enjoy that fresh basil. If you are looking for a way to sneak in a few more greens, I sometimes add a leaf of kale into the walnut pesto. It doesn’t alter the taste much, but it is a great way to add some additional nutrients or finish up that bit of kale that’s left from another meal.
Berry Crisp
This is my new favorite breakfast! It’s warm, flavorful, and has great textures with crisp oats and walnuts. It feels like a treat and yet it is very satisfying. Just remember to soak the dates one night prior to making this breakfast, otherwise, you won’t be able to create the date syrup. I've used frozen strawberries instead of the cherries when I was out, and it is great either way.
