Chickpeas and lentils are pulses, the dried edible seeds of legumes. They are small but mighty! First cultivated over 10,000 years ago in the Middle East, they are full of protein, fiber, and iron. They’re also affordable and absorb flavors well, so they’re great for many dishes. 

Not only are pulses great for your health, but they are incredibly climate-friendly as well. They’re drought resistant and need much less water to grow than other sources of protein. The sustainable nature of pulses helps increase food security not just in the U.S., but around the globe. 

Unfortunately, we aren’t eating enough of them! The average American eats way less than the ½ cup a day recommended by the U.S. Dietary Guidelines. Studies indicate that when you increase your intake of fiber-rich foods such as pulses, you lower the risk of chronic diseases and increase your longevity and gut health.
