Food Coach Nzinga's Favorite Recipes

I have two main factors when selecting a recipe: it has to be filling and it has to be flavorful. This list is full of hearty dishes with international influences, a variety of spices, and loads of veggies. I’m mostly gluten-free at home so you won’t find much bread here, and I try to focus on recipes with overlapping ingredients to keep my grocery list short. Most of these dishes will take 30-45 mins to prepare from start to finish but they’re all well worth it!

Sesame Noodle Bowl with Tempeh & Fresh Vegetables

I make this on a weekly basis but tend to swap tempeh for lots of broccoli. The flavor is phenomenal and it’s very quick to throw together.

Garlic Soy Glazed Wild Mushroom and Spinach Thai Rice Noodle Dish

Since I’ll already have rice noodles on hand for the Sesame Noodle Bowl, I always grab the ingredients to make this dish as well. Try marinating the mushrooms overnight for even more flavor.

West African Inspired Sweet Potatoes and Kale

Super flavorful and filling. I make a big batch of this stew and a pot of quinoa every few Sundays to heat up small portions throughout the week. This dish also works really well in an Instant Pot.

Sesame Ginger Miso Bowl

This recipe tastes really clean and delicious. I use the dressing for other salads since it’s so tasty and often serve this bowl over a bed of greens. To me, the dressing, broccoli, and sweet potatoes are the most vital ingredients. Feel free to use any vegetables you have on hand and the dish will still be delicious.

Triple Berry Vanilla Pudding

Such a great breakfast treat or dessert alternative. I use two parts coconut milk and one part coconut cream for the milk measurement because I love the flavor of coconut and it makes the pudding a bit thicker. Be sure to follow the liquid-to-chia proportions in the recipe. If it’s off, your pudding will either be too watery or too thick.

Coconut-Lime Noodles with Broccoli and Edamame

Another delicious noodle dish. Lemongrass can be hard to find so I’ve prepared this dish without it many times and it’s still delicious.

Penne Arrabiata

Such a simple recipe with lots of flavor. I usually swap out traditional noodles for zucchini noodles and it’s just as delicious!

Coconut French Toast with Maple-Blueberry Syrup

Every now and then I treat myself to this delicious breakfast dish. I took a member's suggestion of baking it in the oven instead of on the stove and it worked beautifully! I cook each side for 15 mins or so at 375 degrees Fahrenheit, but keep an eye on it to see the temperature and cook time that works best for your taste. This one works well with gluten-free bread.
