Food Coach Rachel's Favorite Recipes

I make at least one of these recipes every week! They’re all so delicious that I could never get bored of them. When cooking, I usually make 2-3 servings’ worth of each recipe so that any time I spend cooking gets me a few days worth of meals.

Quite a few of these recipes include sweet potatoes, chickpeas, greens, and nut butter -- shop for them together so that you’re buying fewer ingredients and using up all of what you have over the course of the week.

Plant-Powered Pad Thai

Sometimes you just want some pad Thai and nothing else will hit the spot. Rather than getting expensive and greasy takeout, try making this instead! And try not to eat the whole batch at once. 😊

Chili Spiced Chickpeas and Sweet Potato Spinach Salad

This is my go-to lunch that never leaves me hungry. I like to prep a few serving’s worth of the roasted sweet potatoes and chickpeas so that I can heat them up throughout the week and eat this salad for a few days!

Blueberry, Spice & Everything Nice Smoothie

This is one of my all time favorite smoothies! It’s a bit richer than your usual fruity smoothies, so it’s a great alternative when you want a smoothie but are craving something a little different. Pro tip: I ALWAYS add baby spinach to my smoothies, no matter what kind, because it’s an easy way to get in extra greens and you can’t taste the difference!

Late-night Sloppy Joe’s

Sometimes I just wanna take a big bite out of a burger or sandwich, and this really hits the spot.

Chickpea Caesar Salad

This one is a little more time intensive because it requires making your own dressing, but let me tell you it is SO worth it! Make extra and keep it in the fridge to use on other dishes (or leftovers) throughout the week.

Aloo Asparagus & Tempeh

I love the warm flavors in this one. The softness of the sweet potato, crunch of the asparagus, and nuttiness of the tempeh all come together perfectly.

Quick Thai Chickpeas

Starting and ending this list with Thai flavors! The peanut sauce in this recipe is delicious -- I like to use curly kale in this recipe so it really gets smothered with flavor in all those nooks and crannies.
