With a plant-based toddler and an omnivore husband, my favorite meals need to have a few things in common: quick, nutritious, flexible and filling! For myself, I also love very fresh and light flavors.

Green Power Smoothie

I am a green smoothie lover and my entire family, along with anyone who stays at our home for any length of time, also learns to love them! Smoothies are extremely flexible with ingredients, make a great meal or snack for anytime of the day, and can be loaded with nutrition! This is a lovely green smoothie that is a good starter recipe as it doesn’t taste too “green”.

Overnight Oats - Berries ‘N Cream

When I learned to make overnight oats, it was a lifesaver! Busy mornings no longer mean just a piece of toast for breakfast! Everyone in my family loves overnight oats and they are so versatile we can easily change the fruits to what is in season or in the fridge.

Stuffed Baked Potato & Avocado Salad

Before eating a whole food, plant-based diet, I never thought to top baked potatoes with anything but butter, bacon and cheese! Now I know there are so many wonderful flavors that can enhance a baked potato that it’s hard to choose my favorite, but I think this is the best for someone new to eating a plant-based, stuffed baked potato!

The Vegg Salad Sandwich

Learning to use tofu to make an “egg” salad sandwich was a game changer for me! I love this recipe as it uses hummus instead of mayonnaise which is a great oil-free, protein-boosting trick.

Tofu Burrito Bowl

Rounding out my favorites are bowls! You can’t go wrong with any Mexican-style bowl of goodness! This is flexible for whatever you have on hand and comes together quickly. It’s a tried and true favorite for the entire family!
